Another (short) week down. Over Labor Day, our friends Zach & Lauren visited. We had a wonderful time reconnecting and doing all the Colorado Things. Zach, John and I went to middle and high school together - Zach and John were each-others’ Best Man at our weddings. Lauren and I became fast friends after college when we all lived in Colorado. Now they are in New York, so it’s important to see each other a couple of times a year.
After they left, I spent the week getting lots of sleep and getting shit done. The extended weekend launched me into the new week with focus and determination. However, I realized that I was missing one key thing in … assimilation! I wrote about taking a pause to let new information soak in for this week’s newsletter. I’m reading another book by Richard Dotts. I just starting the book, but I adore this quote: “Life is supposed to be easy. Life is supposed to be creative, fun and effortless. We are here to create and to see our creations to fruition, and then to create some more.” Let’s enjoy the fruits of our labor!
Homemade nut-milk is so good and so easy. This week I decided to mix things up and make an extra creamy variation - energy Vanilla Almond-Macadamia milk. I tested this while our friends Zach and Lauren were visiting, and they approve! It’s great steamed and added to coffee or with granola.
Soak ⅔ cup almond pieces and ½ cup macadamia nuts in water with 1 tsp salt or a splash of apple cider vinegar overnight. This softens the nuts and helps break down the phytates (which makes it easier for our bodies to digest)
Strain and rinse nuts
Combine 4 ½ cups of water and soaked nuts in a blender
Add ½ tsp sea salt + 1 tsp Vanilla Powder (this makes is slightly sweet without sugar)
Alternatively, you can add 1-2 pitted dates to make it naturally sweet
Blend on high for 60 seconds
Strain through a nut milk bag
This will keep in the fridge for 3-4 days (shake before use)

Even though I am no longer a student, the “back to school” season is deeply ingrained in me. This time of year naturally invites new routines, inspiration and a get-things-done attitude. After the holiday weekend, I decided to add more structure into my work days. Part of that is a new wake up time! I’m waking up between 6:00 and 6:15 each morning. Mornings are the most productive time for me. I get up (before John) so I can enjoy quiet time, read and start my day with intention.
With all of the hiking and mountaineering I’ve done this summer, I needed some sturdy shoes. Lucky for me, John’s sister, Anna is a rep for Salomon! When we visited her last weekend, she gifted me an awesome pair of shoes. My new shoes actually fit properly, are sturdy and are very effective on the trail. I feel like a real mountain woman now!
