A Week in Review (Edition #15)

Happy Weekend! Oh… my… goodness! Friends, I overdid it this week. Interestingly, I am realizing that I am mostly an Introvert when it comes to socializing and RECOVERY. I become depleted relatively easily when socializing and need a LOT of down time to recharge and recover. Well, let’s just say, I had many events on the calendar this week, and not enough down time. I’m TIRED! With that, I also realized that I complained about being tired ALL week… which is not particularly helpful. Instead I need to focus on ways to find rest, and actively recover. Pretty, Guilty Women

I’ve been in the mood for a light and fun book… a novel if you will. While at a book store in Vail, I found a cute new book that fit the bill. I only just started, but am already enjoying the reprieve of a novel!

FAVORITE RECIPE

Carnitas

Last weekend I cleaned out the pantry AND freezer. With that, I realized I had a lot of food to eat. So in lieu of grocery shopping, I decided to “make it work” and cook only from my fridge, freezer and pantry. This was a fun challenge. I found a pork butt and immediately made one of my favorite recipes - pork carnitas. I used THIS RECIPE and it was everything. In fact, we’re having leftovers tonight.

Dandelion, Chicory And Burdock Root Tea (Coffee Replacement)

I went to Boulder this week… TWICE! Of of my favorite #soboulder places is called Wonder Press. It’s a coffee/juice/smoothie bar that makes everything in house. I’m weaning myself off of coffee and this places makes lattes and butter coffee with their dandelion-chicory-burdock “coffee replacement.” I find it to be DELICIOUS, especially when paired with a touch of maple syrup and their house-made almond-coconut milk.

Beeswax Candle

I LOVE beeswax candles, though they are a bit hard to find! While in Boulder, I found an ADORABLE bee-focused shop (#soboulder). They had had lotions, honey, mead and beeswax candles. I bought one and learned that they emit “negative ions” much like Himalayan Salt crystals. I light it for my evening meditation and wind down.

I launched a podcast a few weeks ago, Woohooo!! It’s oddly satisfying and exciting. You see, I wanted an outlet for my thoughts for quite sometime, and now I have one! The Tuning IN Podcast has SEVEN episodes live, with a new one releasing each Wednesday for “Woo-Woo Wednesday.” On this podcast, I’m talking self-care, intuition and your internal guidance system. We cover “wooo-woo” topics in a practical and approachable way.
